One of the most popular appetizers at restaurants and sports bars throughout the country are warm, gooey mozzarella sticks served with a side of marinara sauce…but not all are created equal. As mozzarella stick aficionados – and the first to start mass producing them for restaurants in 1982 through our Fred’s for Starters brand, we wanted to share our thoughts on what makes the perfect mozzarella stick.
First and foremost, it all comes down to the cheese, especially finding the right mozzarella with low moisture content. After over 30 years of recipe development in our test kitchens we’ve found that a part-skim mozzarella works best given its lower butterfat content. It also provides that cheese stretch we all love.
In addition to the cheese, the second biggest factor to create amazing mozzarella sticks is the coating. Our breaded mozzarella stick coating is made with loaves of crusted bread, ground up to create a homemade-style bread crumb with golden highlights, our battered mozzarella sticks are coated with a light and airy mixture that delivers a crisp, crunchy texture with no crumb fall-off in an operator’s fryer.
Last but definitely not least, you have to some sort of dipping sauce to complement the flavor of the coating and cheese. Marinara is the most popular option, as well as ranch dressing. Other flavors are BBQ sauce, honey mustard dressing and nacho cheese. The dipping possibilities are endless!
We are excited to continue to push the envelope in the mozzarella cheese stick world and our Hotzzarella jalapeño cheese sticks which are a jalapeño-flavored mozzarella cheese coated in a spicy red pepper and vinegar breading. These great tasting sticks are a great way for restaurants to easily expand their menu with a unique and flavorful offering.
